Dessert Chimichangas

Chimichangas are one of my family’s favorite dish. However, I’ve only made then as a main dish. I was Pinterest-ing one day and came across Apple chimichangas. They sounded and looked delicious! As I sat here contemplating WHEN I was going to make them, I remembered the Mexican restaurant where I live serves something like this except, theirs are made with a cheesecake kind of filling. Who doesn’t like cheesecake?! 

Here’s what you’ll need……

1 package cream cheese softened

1/3 cup sugar

2 tablespoons flour

1 teaspoon of vanilla (or as much as you desire, I tend to put more vanilla in all of my recipes that call for it)

1 Can apple pie filling

Pack of 10 flour tortillas

Oil to fry 

For Dusting 

1/2 cup of sugar

Cinnamon as desired 

 

Beat cream cheese until it looks fluffy. Add sugar and beat until well blended. Add flour and vanilla. Stir in pie filling. 

In a separate dish combine sugar and cinnamon. 

Heat up tortillas so they are soft enough to roll.

Distribute mixture on tortillas evenly.

Tuck both ends of tortillas in, like a burrito and roll. Make sure oil is hot and drop the chimichangas in until all sides are brown. Take out and place on a plate with paper towels to dry off excess oil, do not let the chimichangas cool off. you’ll need them hot enough for the next step. Drop them in your dish with the sugar and cinnamon. Dust all sides and place in a plate. Drizzle with chocolate syrup or any other flavor you’d like. Image

 

My concern with them was, if they were going to be good if they were not served hot…….They are! My girls had them for breakfast the following morning and they were still delicious. If you do not want them cold, pop them in the microwave for about 20 seconds and they will be nice and warm! 

I will be making these again and maybe trying frozen blueberries or strawberries. I’ll update and let everyone know if they turn out the same.
